On days when you are very tired after a long day’s work, do you find yourself struggling to decide what to cook for dinner which is easy but nutritious at the same time? Well let me sort this out for you.

Easiest but the most nutritious dinner to have is Ghee Rice and Daal (lentils) with a side of homemade pickle.

Why is it one of best dinners?

๐Ÿ‘‰ Rice is the easiest food to digest, so great for dinner. Add a teaspoon of ghee to your rice and the glycemic index decreases straight away, thus keeping your insulin levels stable.

๐Ÿ‘‰ Rice is rich in amino acids (protein), carbs, is gut friendly as it is a pre-biotic and also rich in vitamins and phyto-nutrients.

๐Ÿ‘‰ Daal is rich in essential amino acids (proteins), carbs, vitamins, minerals such as iron and calcium, and fiber.

๐Ÿ‘‰When daal is mixed with rice, the amino acid profile is complete and you get a wholesome meal.

๐Ÿ‘‰ The side of homemade pickle is a great pro-biotic. Pickle prepared at home with traditional processes is what you need as a side. But remember to eat it like a side not like the mains!

Daal, rice and pickle is a meal that is a perfect mix of essential proteins, carbohydrates and fibre. A meal that you can have any time of the day but is great for dinner as its light on the stomach.

IMPORTANT: If someone has said to you to eat brown rice instead of white rice, please refrain from following that. That’s because white rice, daal and pickle have enough fibre that your body needs. If you eat too much fibre (brown rice), it interferes with the assimilation of essential vitamins and minerals. That’s because too much fibre causes phytates to be produced, which is famously known as an ANTI-NUTRIENT compound. I personally like Basmati rice, but you can eat the variety according to the region that you stay in.

Yes, people with diabetes can eat white rice too, just remember to add a tablespoon of ghee to it and you will see the magic.
